Selection of Viura and tempranillo grapes from vineyards in Rioja Alavesa and Rioja Alta, with very poor chalky soils with a clayey-loam texture.
Pressing and skin maceration for about 3 hours in order to extract the aromatic fraction. Very gentle pressing separating different fractions of flower must.
Fermentation in stainless steel tanks at a controlled temperature of 16º C to maintain the maximum aromatic freshness in the wine.

Fermentation and ageing
Most of the wine fermented in stainless steel vats under temperature control in order to enhance its aromas and freshness. A small percentage fermented in French oak barrels.
